Ingredients:
- 1 Tblsp. olive oil
- 1 C. chopped onions, carrots and celery (can be frozen)
- 3 frozen cubes Dorot Gardens Garlic
- 3 frozen cubes Dorot Gardens Ginger
- 3 frozen cubes Dorot Gardens Turmeric
- 3 frozen cubes Dorot Gardens Cilantro
- 1.5 Qt. chicken stock
- 1/3 C. rice
- 2 boneless and skinless chicken breasts or 4 thighs
- Salt and pepper, to taste
- 1/2 lemon
- Chopped scallions, if desired
Directions:
- In a large saucepan or dutch oven heat olive oil on medium heat. Sauté chopped vegetables with all of the frozen Dorot Gardens cubes until softened.
- Add chicken stock and allow to come to a simmer.
- Add rice and raw chicken and cook until chicken registers 165F using an instant thermometer.
- Remove chicken and shred with two forks. Once rice is fully cooked, add shredded chicken back in and season to taste.
- Squeeze lemon juice and serve with chopped scallions and lemon slices, if desired.
