Healthy Chicken and Rice Soup Made Easier

This healthy chicken and rice soup is warm, comforting, and simple enough for a busy weeknight. Chicken, rice, vegetables, and flavorful broth come together in one satisfying bowl, while lemon and scallions provide a fresh finishing touch.

To make preparation even easier, Dorot Gardens cubes go straight from the freezer into the pot. Garlic, ginger, turmeric, and cilantro add plenty of flavor without the extra work of peeling, chopping, or measuring.

Why You’ll Love This Healthy Chicken and Rice Soup Recipe

A great healthy chicken and rice soup recipe should feel hearty and satisfying without being too heavy. This
version starts with a classic combination of chicken, rice, onions, carrots, and celery.

From there, the Dorot Gardens cubes melt into the broth and build layers of flavor throughout the soup.
Garlic adds savory depth, ginger brings gentle warmth, turmeric contributes richness, and cilantro provides
a bright, fresh note.

A squeeze of lemon at the end ties everything together.

Flavor From Dorot Gardens Cubes

Another reason this recipe is so convenient is its simple approach to building flavor. Rather than prepping several fresh ingredients, you can add the frozen Dorot Gardens cubes directly to the pot with the vegetables.

As the soup simmers, the cubes melt into the broth and infuse every spoonful. The result is a homemade-tasting soup with minimal prep.

Tips for the Best Chicken and Rice Soup

Once the chicken and rice are added, maintain a gentle simmer. This helps the chicken cook evenly while
allowing the rice to become tender.

When the chicken is fully cooked, shred it with two forks and stir it back into the soup. Before serving,
taste and adjust the seasoning with salt, pepper, and lemon juice as needed.

If the soup thickens during storage, that’s completely normal. Rice naturally absorbs liquid over time, so simply add a little extra stock while reheating to return the soup to your preferred consistency.

What to Serve With Healthy Chicken and Rice Soup

This healthy chicken and rice soup is satisfying on its own, but it also pairs well with a few simple sides. Serve it with crusty bread, crackers, a green salad, or roasted vegetables.

For an extra touch of freshness, garnish each bowl with chopped scallions and lemon slices just before serving.

FAQs about This Recipe

Yes. This recipe works well with either boneless, skinless chicken breasts or boneless, skinless chicken thighs. Chicken thighs provide a richer flavor and tend to stay especially tender, while chicken breasts offer a lighter option.

Yes. You can make the soup ahead of time and store it in the refrigerator. Keep in mind that the rice will continue to absorb some of the broth as it sits, so you may want to add a little extra stock when reheating.

Cook the soup only until the rice is tender, and avoid simmering it longer than necessary afterward. If you’re preparing the soup ahead of time, you can also cook the rice separately and add it when serving to help maintain the best texture.

Yes. If you already have cooked chicken, stir it in near the end of cooking and let it warm through before serving. This can also help shorten the overall cooking time.
