Mexican Quinoa Salad
Ingredients
- 2 cups cooked quinoa, any variety
- 1 can black beans
- 1 can corn
- 1 medium red onion, finely chopped
- 1 large tomato, chopped
- 1 red pepper, chopped
- Optional: 1 avocado, chopped
Dressing
- 1/4 cup lime juice
- 2 tablespoons white vinegar
- 4 cubes Doroto’s Frozen Chopped Cilantro
- 2 teaspoons sugar
- 1 cube Dorot’s Frozen Crushed Garlic
- Salt and pepper
- 1/2 cup olive oil
Directions
1. Mix salad ingredients together in a large bowl.
2. Mix dressing ingredients together in a separate bowl. Combine with salad just before serving.
